Legal Administrator | Sizzling Platter, LLC

The Tone:
This is a full-time, on-site role at Sizzling Platter LLC, located in Salt Lake City, UT, at the corporate office. Sizzling Platter is a multi-brand restaurant company operating and franchising concepts such as Wingstop, Little Caesars, and Jersey Mike’s across the country. This role provides essential administrative support to the Legal Department, focusing on insurance claims, risk management, new store development, and general legal project management. The Legal Administrator acts as the administrative backbone for critical legal functions, ensuring smooth operations and timely fulfillment of tasks.

• Mission: Provides administrative support for insurance claims, litigation coordination, contract tracking, and legal project management within the Legal Department.

What You’ll Actually Do
• Claims Administration: Manage the reporting, documentation, and process administration for third-party liability and property-damage insurance claims.
• Litigation Support: Coordinate with General Counsel, insurance administrators, and external legal counsel on active litigation matters, including managing invoices and discovery.
• Incident Investigation: Review incident reports, conduct additional investigations with operations, download surveillance footage, and prepare fact summaries and timelines.
• Contract and Project Management: Support the General Counsel by maintaining current contract records, tracking approvals and renewals, and providing administrative assistance for real estate development projects.
• Process Improvement: Help continually improve department processes by leveraging existing tools and exploring new technology, including AI-powered solutions.

The Must-Haves
• Background: Prior experience in a legal administration, paralegal, claims administration, or risk management support role.
• Experience: Proficiency with Microsoft Office (Word, Excel, Outlook) and comfort learning matter management or claims administration software.
• Skills: Strong organizational skills, high attention to detail and accuracy, discretion and sound judgment in handling sensitive information, strong written and verbal communication, and the ability to work independently.
• Bonus: Interest in leveraging new tools and technology, including AI-powered solutions, to improve department workflows.
