Job Description:
This position provides professional culinary support to all aspects of Culinary Services, including:
• Recipe development and testing.
• Internal and external training on branded and custom products.
• Supporting the Product Development (PD) department with new products.
• Overseeing inventory (products, equipment, small wares) at the Culinary Center.
• Maintaining sanitation and safety best practices.
• Cooking a variety of products using different equipment (sauté, grill, fryer, pizza oven).
• Preparing cold products, including dressings, sauces, appetizers, and salads.
• Creating menus for internal culinary functions, emphasizing Nestle Health and Wellness directions.
• Maintaining cleanliness and organization of the kitchen, including refrigerators, freezers, dry storage, and equipment.
Responsibilities:
• Assist in the development and testing of recipes.
• Support training efforts for branded and custom products for internal and external customers.
• Support PD department with new products.
• Oversee Culinary Center product, equipment, and small wares inventory.
• Maintain sanitation and safety best practices at Culinary Center.
• Cook a variety of products on various pieces of equipment including sauté, grill, fryer, and pizza oven. This will be for recipe development/testing, training, and culinary functions
• Prepare and assemble cold products according to need for recipe development, training, and culinary functions. This would include from scratch dressings, cold sauces, dips, spreads, cold appetizers including vegetable, seafood, and meat, and various salads
• Assist in creating menus for internal culinary functions and recipe development with a strong emphasis on Nestle Health and Wellness direction. This would involve using a full range of current and prototype products in a wide variety of cuisines and operator segments. Adherence to strict measurement and recipe guidelines is essential.
• Cleanliness and organization of kitchen including refrigerators, freezers, dry storage, and equipment. This would involve a daily and weekly cleaning schedule of all areas of the kitchen and all equipment. Most items in the kitchen are maintained by the kitchen staff who would take great pride in their work area.
Requirements/Education:
• Education: Currently enrolled in a culinary-based program.
Skills:
• Strong Culinary Skills
• Knowledge of Traditional and Ethnic Cuisines
• Hands-on Back of House (BOH) kitchen experience.
• Excellent communication skills and ability to work with a wide variety of people.
