Job Description: Culinary Internship

This is a temporary Culinary Internship position at High Hampton in Cashiers, NC, primarily focused on food preparation in a high-level kitchen environment.

Salary Range: Undisclosed (Paid at an hourly rate)

Key Responsibilities:
• Responsible for all aspects of food preparation, from initial tasks up to the final presentation for delivery to guests.
• Perform food preparation tasks as assigned by the Sous Chefs, including basic vegetable preparation, vinaigrettes, salads, and stocks.
• Engage in more advanced techniques such as meat fabrication and sauce making.
• Maintain a clean work area and kitchen during and at the end of the shift.
• Assist with receiving deliveries to the kitchen.
• Must be able to take directions and accurately follow recipes.
• Will work in a supervised environment, collaborating with other Team Members and managers.

Internship Specifics:
• The internship will last approximately 15 weeks.
• Interns are required to arrive within 2 weeks of the trimester start date and depart no later than the end date.
• The position is expected to be 30-40 hours per week.
• Interns are paid at an hourly rate.
• High Hampton is currently accepting applications for the Fall Trimester (September – December).
• A limited number of positions are available, dependent on housing availability.

Qualifications and Requirements:

Education and/or Experience:
• Required to have completed at least one year of culinary school.
• Possess a basic understanding of proper food handling procedures (e.g., blanching, sautéing, standard breading).
• Demonstrate basic knife skills.
• Have basic kitchen operations experience.
• Experience cooking in a high-level kitchen is essential.

Language Skills:
• Must be able to read and understand recipes.
• Must be able to communicate effectively with other cooks to ensure timely delivery of dishes to guests.

Mathematical Skills:
• Basic knowledge and understanding of math are required.

Reasoning Ability:
• Must be able to exercise judgment and make decisions based on job knowledge and awareness of company goals.

Physical Demands:
• Must be able to lift up to 50 lbs.
• Must be able to stand for long periods.
• Must be able to safely operate a company vehicle or golf cart.
• Must be able to work outdoors in all weather conditions.

General Requirements:
• Must comply with all company policies and procedures.
• Regular and predictable attendance is required to perform the essential functions of this position.
• Must be able to work well with other Team Members and managers, and interact positively with guests.

Work Environment:
• The intern will work in Dining Room, Bar, and Kitchen areas.
• The property encompasses 1,400 acres of High Hampton.
